Yunnan Pu Erh Tea

Pu Erh Tea is a kind of dark tea only found in China's Yunnan Province. It's originally produced in the "Six Famous Mountains" in Xishuangbanna and gets its name from Pu'er, a town where most of the tea is processed and sold. Pu'er Tea has a long history.

Pu er Tea includes two varieties, raw tea or green tea and ripened or fermented tea. However, people usually refer Pu'er Tea to the fermented one to distinguish it from other kinds of green tea. Early in the Tang Dynasty, tea trade between Pu'er and other areas already began. Now a 2,700-year-old wild tea tree still produces tea leaves and thrives in the city. Every spring, locals go to tea planting fields to pick tea leaves. The time to pick tea leaves shouldn't be too early or too late. Usually it starts at 9 a.m and finishes by 3 p.m from February to December. Spring tea leaves are the best of the whole year.

Made from fresh leaves of big-leaf tea trees of Yunnan, Pu'er Tea has a distinctive aroma thanks to the special fermentation procedure in the processing steps. Pu'er Tea is big and rough in shape, black or brown red in color and the soup tastes mellow, leaving a sweet aftertaste. The tea is mild in nature and does no harm to the stomach. At the same time, it has medicinal effects of "fat removing, body slimming and digestion promoting" and is called "cosmetic tea" or "slimming tea".

Pu erh Tea can be made into tea bricks after being steamed and compressed for easy storage. The nature of the tea varies - the taste changes with the length of time it's stored; the longer it's stored, the better it tastes. Thus, Pu'er Tea not only makes a good drink, but also a valuable collector's item.

Selection of tea pots
It is necessary that the tea pots should have a big belly, as Puer tea is thick in flavor, so using a tea pot with a big belly can ensure the liquor not being too thick. It is recommended that the tea pots should be made of argil or purple-clay.

Amount of tea leaves
While infusing Puer tea, the tea leaves should take up 20% space of the tea pot. The liquor would taste better if the brick tea or cake tea has been dispersed and exposed to the air for two weeks before it is infused.

Tasting of Puer tea
Firstly, put some tea leaves into the tea pot, and fill in some boiled water. Generally speaking, the tea leaves should be flushed by hot water once before being brewed in the boiled water. And it is a must-have procedure for infusing Puer tea. Other than strengthening the taste of the tea leaves, to flush the tea leaves with hot water has the important function of clearing the impurities on the leaves. The process of flushing the tea leaves with hot water should be fast, as its function is to clean the tea leaves, not brewing the flavor. However, when infusing the tea for the second time, the thickness or lightness of the liquor should be decided by personal preference, as the liquor is for drinking. The taste is quite good even after Puer tea cools down, so in summer it can be cooled or iced before drinking.
