Chongqing Hotpot
One of the most famous parts of Chongqing, is the famous Chongqing Hotpot. It is famous throughout China and the world for its incredibly spicy tongue numbing flavor. It is incredibly popular with locals, especially during the hot summer months.
Originally created by sailors plying their trade in the Chongqing area of the Yangtze River and eventually spread throughout Sichuan Province. The dish is known for its fresh ingredients, and incredible flavor. Ingredients, such as raw meats, varieties of tofu, vegetables, and fruits are prepared ahead of time and beautifully placed on small plates around the hotpot which is filled with spicy broth. The ingredients are placed in the hotpot to cook and are then picked out. It has a very community feel to it since everyone is involved in the cooking and eating. Many of the hotpots are separated into two parts, one with the spicy broth and the other with a delicious soup broth, for those who do not like spicy foods.
